Curried cauliflower soup

Husband's comments on a cold winter's night - This soup is really delicious, and we had to fight as to who got the leftovers for lunch next day!

1 large cauliflower

1 cup coconut milk or cream (depending on how creamy you want it).

1 teaspoon salt

1/2 teaspoon ground turmeric

1&1/2 teaspoons ground coriander

1 teaspoon each of finely chopped garlic, ginger

Green chili to taste

1 teaspoon lemon zest

Fresh coriander and lemons for garnish

Cut cauliflower in to florets and place in to a large saucepan.

Add the coconut milk or cream and 1 cup of water into the pot.

Add salt, spices and garlic, ginger and chili.

Bring to the boil and simmer with a lid until cauliflower is soft and tender.

Remove form heat, and blend. I prefer using my blender as it gives a real creamy texture compared to my stick blender.

I served our curried cauliflower soup with curried lamb meatballs on a skewer to dip into the soup.
