Artichoke Dip - Seed-Free


400g jarred artichoke hearts

1 small clove garlic

1/4 C extra virgin olive oil

2 T fresh lemon juice

2 t lemon zest

2 T red onions, minced

1/2 t ground cumin

salt to taste

1 T chopped parsley - for garnish


  1. Drain the artichoke hearts from the liquid and get out as much of the residual water as possible. Place into food processor.

  2. Add garlic clove, cumin, salt and lemon juice to food processor and blend until smooth. Scrape down the sides of the food processor.

  3. Turn the food processor on and slowly stream in olive oil.

  4. To serve, scoop dip into a small bowl and top with chopped parsley, minced red onion, lemon zest and drizzle with olive oil.

  5. Serve with raw vegetable sticks or beet chips for dipping. Alternatively served on top of top of grilled chicken.

Benefits of Artichokes

  • Good for creating good bowel motions. Increase faecal mass and/or stool frequency due to the type of fibres: oligofructose and inulin, both are prebiotic.
